Custard Muffins

Ingredients

  • 3 ounce. pkg. egg custard mix
  • 2 c. flour
  • 1/2 teaspoon salt
  • 1/3 c. lowfat milk or possibly a little more if necessary
  • 2 ounce. lowfat sour cream
  • 2 1/2 teaspoon baking pwdr
  • 1/2 teaspoon baking soda

Directions

  1. Grease 12 large muffin tins. Heat oven to 375 degrees. In mixing bowl, mix custard and lowfat sour cream. Sift flour and measure into c. lightly. Mix all dry ingredients together. Add in lowfat milk and flour alternately into the custard mix and mix well.
  2. Fill prepared muffin tins 2/3 full. Sprinkle tops with sugar or possibly cinnamon sugar mix. Bake 20-25 min till brown.
