Curried Turkey, Fruit And Nut Salad

Ingredients

  • 1/2 c. Chutney
  • 1 tsp Curry pwdr
  • 1/2 tsp Grnd ginger
  • 1/3 c. Plain yogurt
  • 2 1/2 c. Turkey, cooked, shredded in bite sized pcs
  • 1 lrg Papaya, halved, seeded, peeled & sliced
  • 3 x Kiwi, peel, cut lenghtwise in half, slice crosswise
  • 1/4 c. Blanched slivered almonds, toasted Fresh spinach leaves, stem wash, well liquid removed
  • 4 x Tortilla salad shells

Directions

  1. Whisk together chutney, curry pwdr and ginger in small saucepan. Bring to boiling over medium heat. Cook, stirring occasionally, 2-3 min. Cold slightly. Stir in yogurt. Place dressing in a large bowl; add in turkey.
  2. Chill several hrs. Bake tortilla salad shells as directed on package. Add in papaya, kiwi and almonds to turkey mix. Line cooled tortilla bowls with spinach leaves. Fill each shell with turkey mix.
  3. Serve immediately.
