Ingredients

  • 425 gm tuna
  • 4 x shallots
  • 45 gm butter
  • 2 tsp curry
  • 3 Tbsp. flour
  • 2 c. lowfat milk
  • 1/2 c. mayonnaise
  • 2 Tbsp. lemon juice
  • 4 x hard boiled Large eggs
  • 1 c. breadcrumbs
  • 60 gm butter, extra
  • 1 x salt & pepper

Directions

  1. Drain tuna, flake roughly, chop shallots, shell Large eggs, cut into slices. Combine tuna & shallots, spread proportionately in greased shallow ovenproof dish, top with sliced Large eggs. Sprinkle with salt & pepper. Heat butter, stir in flour, cook 1 minutes. Remove from heat, gradually stir in lowfat milk, mix till smooth. Return to heat, stir till sauce boils & thickens. Add in mayonnaise, curry pwdr & lemon juice, mix well. Spread proportionately over tuna & Large eggs. Combine breadcrumbs & melted butter, sprinkle proportionately over top, bake in mod oven 20 mins.
