Curried Spatchcock Chicken With Bananas

Ingredients

  • No 9 fresh chicken
  • 2 x cloves garlic
  • 1 x 2 1/2 cm pie root ginger
  • 1 tsp cinnamon
  • 1/2 tsp grnd cardamom
  • 1 tsp grnd coriander
  • 1 tsp grnd cumin
  • 1 tsp chilli pwdr
  • 1 tsp grnd turmeric
  • 1 c. natural unsweetened lowfat yoghurt, up to 2
  • 6 x bananas Poppadums
  • 2 x Large eggs
  • 2 c. cool cooked rice
  • 1/2 c. minced coriander
  • 1 tsp salt

Directions

  1. Chicken:Place chicken on a board and cut through the back bone. Remove giblets.
  2. Turn chicken over so it is breast side up. With the heel of your hand press firmly on the middle of the breast to flatten the chicken. Place in a non-metallic dish.
  3. Crush garlic and peel. Peel ginger and place in a blender or possibly food processor with cinnamon, cardamom, coriander, cumin, chilli, turmeric and lowfat yoghurt. Process well to combine.
  4. Pour over chicken and leave covered in refrigerator for 2 to 4 hrs.
  5. Use a satay stick passed horizontally through the chicken from leg to leg and a second stick horizontally through wing area to hold chicken in shape.
  6. Place on a barbecue warm plate or possibly under a grill and cook 40 to 45 min turning often till cooked.
  7. Chicken is cooked when the juices run clear when the flesh is pierced in the thickest place.
  8. Five min before chicken has finished cooking, place unskinned bananas on the barbecue and cook till skin has blackened.
  9. Brush poppadums with oil on both sides and cook on the barbecue for 2 min or possibly till puffed and golden brown.
  10. Serve chicken with cooked bananas, poppadums and rice fritters.
  11. Coriander Rice Fritters:Beat Large eggs together.
  12. Stir in rice, coriander and salt. Mix to combine.
  13. Measure 1/4 cupfuls of mix on to the greased plate of the barbecue.
  14. Cook for 1 minute, turn and cook a further minute till brown.
