Ingredients

  • 1/2 c. brown rice
  • 1 onion, minced
  • 2 garlic cloves, chopped
  • 2 tbsp. oil
  • 1 teaspoon curry pwdr
  • 2 c. water
  • 1 tbsp. lemon juice
  • 1/2 c. lentils
  • 1/4 pound spinach, minced
  • 12 cherry tomatoes, sliced in half, optional

Directions

  1. Saute/fry rice, onion and garlic in oil till sizzling. Add in curry pwdr, then 2 c. water, lemon juice and lentils. Cover and simmer till tender (about 40 min). Stir in minced spinach (raw). Remove from stove and allow to stand covered for about 5 min. Serve topped with cherry tomatoes. Serves 4 to 6.
