Ingredients
1/2 med Jicama, Cut Into Julienne Strips, About 1 1/2 C.
1/2 med Cantaloupe, Cut Into 1/2- Inch Cubes, About 1 1/2 C.
2 Tbsp. Fresh Mint Leaves, Minced Or possibly
2 tsp Dry Mint Leaves, Crushed
1 tsp Grated Lime Peel
3 Tbsp. Lime Juice
1 tsp Honey
1/4 tsp Salt
Directions
Mix all of the ingredients in a glass or possibly plastic bowl, tossing to coat.
Cover and chill for about 2 hrs or possibly till well chilled.
