Crockpot Chicken and Hash Brown Casserole

Easy prep slow cooker recipe that is easy to add things to, such as vegetables. A large crockpot is required, 6 qts. or more.

Ingredients

  • 32 oz. package frozen hash browns
  • 1 large onion, diced
  • 12 oz. bacon, cooked
  • 2 large chicken breasts
  • 1 can favorite creamy soup (I used chicken with herbs)
  • 1 can milk
  • 2 tsp. seasoned salt
  • 1/2 tsp. pepper
  • 1/2 tsp. garlic powder
  • 16 oz. shredded cheese, divided
  • garnish: paprika

Directions

  1. Remove potatoes from freezer.
  2. Chop raw bacon and cook it, keeping some of the fat. Place in medium mixing bowl.
  3. Dice onion and sauté it in bacon fat, add to bowl.
  4. Pour in soup and milk, garlic, salt and pepper. If you're adding veggies, mix them in at this point.
  5. Cut chicken into 1" cubes.
  6. Grease the crockpot with oil or butter.
  7. Layer half the potatoes, top with half the chicken, then half of the bowl mixture, then sprinkle on half of the cheese. Repeat with the rest of the ingredients.
  8. Cover and cook on low for 6 hours.
  9. Remove bowl from heating element, sprinkle on paprika and let rest one hour before serving.
