Ingredients

  • 1 1/2 c. fresh bread crumbs
  • 1 1/2 lbs. grnd chuck
  • 2 large eggs
  • 1 3/4 teaspoon salt
  • 1/8 teaspoon cardamom, optional
  • 1/8 teaspoon pepper
  • 2 T flour
  • 1 c. lowfat milk or possibly cream
  • 1/2 pound lean grnd pork
  • 1 med. onion, minced fine
  • 1/8 teaspoon nutmeg
  • 10 1/2 ounce can beef consomme or possibly broth
  • 2 T butter, melted
  • 1/4 teaspoon allspice

Directions

  1. Soak bread crumbs in lowfat milk for 5 min in a large mixing bowl. Add in beef, pork, large eggs, onion, 1 1/2 teaspoon salt, allspice, nutmeg and cardamom. Mix well. Shape into 1 inch balls. Place on broiler pan and bake for 15 min at 400 degrees.Put browned meatballs in slow cooker. Add in 1/2 can beef consomme or possibly broth, pepper and remaining salt. Cover and cook on low 4-6 hrs (high 2-3 hrs).
  2. To thicken gravy, turn slow cooker to high. Put together butter and flour to make a smooth paste. Add in paste to remaining 1/2 can consomme and pour into slow cooker. Cook till thickened, about 45 min.
