Ingredients

  • 6 slc bacon, cooked crisp and liquid removed
  • 1/4 c. bacon fat in skillet
  • 1 x clove chopped garlic
  • 1 x green pepper, minced
  • 1 med eggplant, cubed
  • 4 x tomatoes, peeled and minced
  • 1 x onion, minced
  • 2 tsp salt Pepper
  • 2 Tbsp. Parmesan cheese

Directions

  1. Cook ingredients except bacon and cheese in covered skillet till tender and thick. Top with cheese and crumbled bacon. Brown under broiler.
  2. Serves 4.
  3. The spiciness of the eggplant adds a great flavor to this casserole.
