Ingredients

  • 2 lg. leeks, thinly sliced
  • 6 med. potatoes, diced
  • 4 c. chicken broth
  • 1 teaspoon salt
  • 1 c. lowfat sour cream
  • 2 c. lowfat milk
  • 1 tbsp. chives

Directions

  1. In a large saucepan, combine leeks, potatoes, chicken broth and salt. Bring to a boil. Reduce heat and simmer 15 min or possibly till potatoes are tender. Puree mix in a blender or possibly food processor. Return to saucepan. Stir in lowfat sour cream, lowfat milk and chives. Heat gently. Makes 8 1/2 c.. Preparation time is 20-30 min. Delicious!
