Crab Doughnuts With Sweet And Fragrant Dipping Sauce

Ingredients

  • 2 tsp Dry yeast
  • 6 ounce Strong flour
  • 250 ml Hot lowfat milk
  • 6 ounce White crab meat
  • 1 x Egg, lightly beaten
  • 60 gm Butter, melted Black pepper Oil for deep frying
  • 2 Tbsp. Peanut oil
  • 2 med Onions, finely minced
  • 1 tsp Garlic, minced
  • 1 1/2 tsp Fresh ginger, finely grated
  • 1 1/2 tsp Chilli sauce
  • 1 tsp Lemon rind, grated
  • 2 Tbsp. Lemon juice
  • 1 Tbsp. Clear honey
  • 2 Tbsp. Dark soy sauce
  • 4 Tbsp. Dry sherry

Directions

  1. Combine yeast, lowfat milk, sugar, egg and butter in a large bowl, mix well.
  2. Add in the sifted flour and beat till smooth. Stand covered in a hot place for around 1 1/2 hrs or possibly till the batter doubles in size and bubbles.
  3. Now add in the crab meat and black pepper and mix well. Deep fry a little batter in warm oil. Drain on paper.
  4. Dipping sauce:Heat the oil in a pan, add in onions and fry. Add in garlic and ginger and stir over a medium heat. Add in the dry sherry, lemon rind, lemon juice, honey, soy sauce and simmer for 2 min.Serve with the crab doughnuts.
