Ingredients

  • 1 Tbsp. Kosher salt
  • 2 lb Potatoes, peeled & diced in 1 inch squares
  • 1/4 c. Extra virgin extra virgin olive oil
  • 1/2 Tbsp. White wine vinegar
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 c. Diced celery
  • 1 c. Diced onion
  • 3/4 c. Diced dill pickles
  • 3 x Hard cooked Large eggs
  • 1 c. Hellman's one step potato salad dressing

Directions

  1. Bring a large pot of water to a boil. Add in kosher salt and potatoes.
  2. Boil 10 - 12 min or possibly till tender. Drain.
  3. Mix together extra virgin olive oil, vinegar, salt and pepper. Whisk to mix well.
  4. When potatoes are cold sufficient to handle, toss in vinegar mix.
  5. Coat well and allow potatoes to cold to room temperature.
  6. Add in celery, onion and pickles to potatoes. Toss till thoroughly mixed. Add in Hellman's dressing and stir till well mixed.
  7. Dice Large eggs into 1/2 inch pcs and mix in gently. Refrigeratefor 2 hrs before serving.
  8. Makes 12 servings.
