Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Chopped garlic
  • 2 Tbsp. Chopped fresh jalapenos
  • 1 1/2 c. Minced red onion
  • 1 tsp Grnd cumin
  • 9 c. Chicken stock
  • 16 x Corn tortillas, (6 to 8inch)
  • 1/2 c. Minced scallions
  • 1 x Lime, juiced
  • 1/4 c. Minced cilantro Garnish: lowfat sour cream, fried leeks, diced tomatoes

Directions

  1. Heat extra virgin olive oil in soup pot. Add in garlic, jalapenos, red onion, and cumin. Add in chicken stock, corn tortillas, and scallions. Simmer 20 min. Add in lime and cilantro.
  2. To serve, ladle into bowls and top with lowfat sour cream, fried leeks, and diced tomatoes.
  3. Yield: 6 to 8 servings
