Ingredients

  • 1/2 lb cleaned, skinned conch meat
  • 1 sm onion, minced
  • 3 Tbsp. vegetable oil
  • 2 Tbsp. all-purpose flour
  • 2 c. water
  • 2 med potatoes, peeled and cubed
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions

  1. Lb. conch to 1/8-inch thickness, using a meat mallet or possibly rolling pin. Cut conch into bite-size pcs; set aside.
  2. Saute/fry onion in oil in a medium saucepan till tender; add in flour, stirring frequently, till browned.
  3. Add in conch, water, potatoes, salt, and pepper; stir till well till blended. Cook over medium heat, stirring frequently, till potatoes are tender. Serve immediately.
