Ingredients
- 2 medium red onions, thinly sliced
- 2-4 T vegetable oil
- 1 1/2 T minced garlic
- 1 1/2 T minced ginger
- 2 T ground coriander
- 2 t ground cumin
- 1/2 t ground cayenne or paprika
- 1/4 t ground black pepper
- 1/4 t ground turmeric
- 3/4 t ground cinnamon
- 1/2 t ground cloves
- 1-2 small hot chile peppers, split in half (I left out)
- salt to taste
- 2 medium boiling potatoes, cut into 1-inch cubes
- 1 heaping cup chopped tomatoes, preferably fresh and ripe but can use canned, either way drain them in colander first
- 1 cup water
- 1 heaping cup frozen peas
- lemon juice to taste

,%20so%20it%20depends%20on%20how%20much%20time%20I%20have%20and%20what%20I%20need.%20For%20example,%20we%20did%20all%20of%20Alex%E2%80%99s%20ballet%20and%20school%20supply%20shopping%20at%20Meijer.%20At%20any%20rate,%20all%20that%20craziness%20then%20happened%20with%20my%20gall%20bladder%20so%20I%20was%20not%20shopping%20much%20at%20all%20for%20a%20while,%20and%20then%20summer%20came,%20and,%20well,%20it%20was%20a%20crazy%20summer.%20Fun,%20but%20crazy.%20Fast-forward%20to%20now,%20when%20I%20finally%20got%20around%20to%20using%20the%20gift%20card%20they%20sent%20me.%20First,%20I%20want%20to%20say%20if%20you%20are%20looking%20for%20baking%20items%20(bakeware,%20cookie%20cutters,%20cake%20decorating%20pieces)%20and%20you%20live%20in%20the%20middle%20of%20nowhere,%20i.e.,%20nowhere%20near%20a%20real%20cake%20store,%20Meijer%20is%20actually%20a%20good%20option.%20I%20have%20gotten%20very%20competitively%20priced%20cookie%20cutters%20and%20Sil-Pats%20there%20as%20well%20as%20Nordic%20Ware%20bundt%20pans%20and%20cooking%20thermometers.%20I%20also%20took%20the%20opportunity%20to%20try%20the%20Meijer%20Organics%20Honey%20Graham%20Bears,%20which%20were%20perfectly%20acceptable%20(that%20is%20something%20I%20buy%20for%20the%20kids)%20and%20the%20Meijer%20Naturals%20Chocolate%20Chip%20Cookies%E2%80%93which%20were%20an%20extremely%20pleasant%20surprise.%20Made%20with%20butter,%20they%20actually%20rivaled%20the%20Pepperidge%20Farm%20chocolate%20chunk%20cookies,%20which%20are%20my%20go-to%20cookie%20when%20I%20am%20craving%20that%20crunchy%20chocolate%20chip%20cookie%20flavor.%20I%20know%20where%20I%20am%20sending%20John%20next%20time%20I%20start%20craving%20cookies%20when%20I%20am%20sick%20and%20not%20up%20to%20baking!%3C/p%3E%3Cp%3EAbout%20this%20recipe,%20now:%20I%20was%20talking%20to%20a%20friend%20of%20mine%20the%20other%20day%20who%20is%20married%20to%20an%20Indian%20man,%20and%20she%20mentioned%20that%20he%20referred%20to%20rice/legume%20pilafs%20as%20Indian%20comfort%20food.%20I%20told%20her%20that%20for%20me%20Indian%20comfort%20food%20is%20kheema%20(also%20spelled%20keema).%20For%20one%20thing%20it%20is%20exceptionally%20easy,%20easier%20than%20a%20pilaf%20by%20far%20as%20it%20only%20uses%20one%20pot%20and%20the%20pilaf%20usually%20cooks%20the%20legumes%20separately.%20It%20is%20also%20predictable%E2%80%93I%20have%20tried%20many%20variations%20and%20while%20I%20have%20liked%20some%20better%20than%20others,%20I%20have%20enjoyed%20them%20all,%20as%20has%20my%20family.%20It%20is%20also%20great%20%E2%80%9Cgateway%E2%80%9D%20food%20for%20adults%20or%20children%20who%20are%20uncertain%20about%20Indian%20food%20because%20in%20many%20ways%20(but%20not%20exactly%20flavor)%20it%20resembles%20a%20spaghetti%20meat%20sauce.%20There%20is%20just%20something%20comforting%20and%20easy%20about%20them%E2%80%93I%20can%20make%20them%20without%20a%20recipe%20at%20this%20point.%3C/p%3E%3Cp%3EHowever,%20this%20one%20is%20from%20a%20recipe,%20because%20I%20never%20tire%20of%20being%20inspired%20by%20recipes,%20especially%20those%20produced%20by%20someone%20from%20a%20culture%20that%20is%20not%20my%20own.%20So%20far%20my%20favorite%202%20kheemas%20are%20this%20one%20I%20am%20about%20to%20share%20and%20the%20kheema%20with%20greens%20I%20made%20earlier%20this%20summer.%3C/p%3E%3Cp%3EKheema%3C/p%3E%3Cp%3EAdapted%20from%20Curried%20Flavors,%20Maya%20Kaimal%20MacMillan%3C/p%3E%3Cp%3E*I%20almost%20always%20double%20kheema%20recipes,%20first%20because%20we%20love%20them,%20but%20second,%20and%20more%20important,%20because%20(for%20health%20reasons)%20I%20like%20to%20use%20a%20combination%20of%20ground%20turkey%20and%20ground%20beef%E2%80%93and%20they%20don%E2%80%99t%20come%20in%20small%20enough%20packages%20to%20do%20that%20with%20a%20single%20recipe.%20The%20recipe%20below%20is%20a%20%E2%80%9Csingle%E2%80%9D%20recipe.%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20large%20skillet%20over%20medium%20high%20heat.%20Add%20the%20onion%20with%20a%20pinch%20of%20salt,%20and%20fry,%20stirring,%20until%20the%20edges%20are%20nicely%20browned%20and%20it%20is%20beginning%20to%20caramelize.%20Add%20the%20garlic%20and%20ginger%20and%20cook%20for%20another%202%20minutes%E2%80%93the%20onions%20should%20continue%20browning.%20Add%20another%20pinch%20of%20salt%20and%20stir.%3C/p%3E%3Cp%3EAdd%20the%20ground%20meat%20and%20break%20it%20up%20and%20stir%20it%20into%20the%20onions.%20Add%20a%20pinch%20of%20salt.%20Stir%20fry%20the%20meat%20until%20it%20browns.%3C/p%3E%3Cp%3EAdd%20the%20spices%20to%20the%20meat%20and%20stir%20them%20in.%20Add%20the%20chile%20peppers%20at%20this%20point%20if%20using,%20and%20add%20another%20pinch%20of%20salt.%20Add%20the%20potatoes,%20tomatoes%20and%20water%20and%20stir.%20bring%20to%20a%20boil%20and%20reduce%20heat,%20partially%20covers,%20to%20simmer%20for%2030%20minutes.%20Check%20if%20the%20potatoes%20are%20tender%20and%20if%20the%20mixture%20is%20too%20dry%20or%20wet%20at%20this%20point.%20If%20too%20dry,%20add%20a%20little%20more%20water,%20if%20too%20wet,%20simmer%20more%20briskly%E2%80%93and%20either%20way%20continue%20simmering%20if%20the%20potatoes%20are%20not%20done%20(cover%20the%20pan%20completely%20if%20the%20moisture%20balance%20is%20perfect%20though%E2%80%93it%20should%20be%20moist%20but%20not%20watery).%20When%20the%20potatoes%20are%20tender%20but%20still%20holding%20together,%20add%20the%20peas%20and%20simmer%20for%205%20more%20minutes.%20Taste%20for%20salt%20and%20add%20a%20squirt%20of%20lemon%20juice.%20Serve%20with%20basmati%20rice%20and%20Greek%20yogurt%20with%20your%20chutney%20of%20choice%20(I%20used%20a%20locally%20made%20plum%20chutney).%20I%20also%20serve%20with%20red%20pepper%20flakes%20and/or%20cayenne%20pepper%20to%20increase%20the%20heat%20for%20those%20who%20want%20it.%3C/p%3E){kind=link}
