Ingredients

  • 4 lb collard greens
  • 1/4 lb smoked turkey breast
  • 3 c. reduced-sodium, reduced-fat chicken broth
  • 2 med onions, minced
  • 3 whl garlic cloves, crushed
  • 1 tsp red pepper flakes
  • 1 tsp pepper

Directions

  1. Wash and cut the collard greens and place them in a large stockpot. Add in the remaining ingredients and sufficient water to cover.
  2. Cook till tender, stirring occasionally, about 3 1/2 hrs. The flavors will blend even more if you let the greens sit for a bit after cooking.
  3. Serving size: 1 c.
