Cold Marinated Greek Shrimp Recipe

Ingredients

  • 1 lb large shrimp in the shell
  • 6 x garlic cloves chopped
  • 1/3 c. lemon juice
  • 1/3 c. extra virgin olive oil
  • 2 Tbsp. minced fresh oregano or possibly parsley
  • 1 tsp grated lemon zest Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Bring a large pot of water to a boil. Add in healthy pinch of salt and the shrimp, and cook about 2 min, till orange-pink. Drain and set aside to cold. When cold sufficient to handle, remove shells and cut shrimp in half lengthwise, removing vein.
  2. Whisk together garlic, lemon juice, extra virgin olive oil, oregano, and lemon zest in a large bowl. Add in shrimp, salt, and pepper, and toss to combine. Refrigerateand serve.
  3. This recipe yields 6 servings.
