Ingredients
- ¾ cup strong coffee
- 1 t instant espresso powder
- ¼ cup agave syrup (or honey if you donât mind a honey flavor)
- ¾ cup (1½ sticks) unsalted butter, room temperature
- 1½ cups dark brown sugar

,%20however%20they%20have%20mostly%20not%20been%20blog%20worthy%20dinners.%20But%20in%20between%20various%20illnesses%20peaking,%20I%20have%20found%20time%20for%20some%20blog%20worthy%20desserts.%3C/p%3E%3Cp%3EI%20made%20this%20cake%20to%20take%20to%20my%20family%E2%80%99s%20home,%20the%20weekend%20I%20was%20in%20Columbus%20for%20the%20Ohio%20State-Michigan%20basketball%20game,%20which%20was%20the%20same%20weekend%20I%20made%20the%20mujadarra%20for%20Cook,%20Eat,%20Tweet.%20%20Photographing%20the%20mujadarra%20was%20rushed,%20because%20I%20was%20tweeting%20and%20then%20eating%20on%20my%20way%20out%20the%20door%20to%20our%20evening%20plans,%20plus%20by%20the%20time%20I%20served%20the%20mujadarra%20I%20had%20lost%20the%20light.%20But%20the%20cake?%20What%20a%20dream!%20First,%20my%20mom%20had%20the%20fabulous%20cake%20stand,%20which%20has%20inspired%20me%20to%20acquire%20one%20for%20my%20kitchen%20as%20well.%3C/p%3E%3Cp%3ESecond,%20and%20alas%20I%20cannot%20do%20anything%20to%20replicate%20this%20one,%20but%20my%20mom%E2%80%99s%20renovated%20kitchen%20has%20an%20island%20with%20a%20lowered%20counter%20for%20kneading%20at%20one%20end.%20This%20lowered%20counter%20is%20under%20sky%20lights%20(!!!%20natural%20light!!!).%20Talk%20about%20a%20staging%20dream.%20Especially%20for%20someone%20like%20me,%20who%20never%20wants%20to%20think%20about%20staging%20(and%20who,%20I%20confess,%20rarely%20does).%20%20Instant%20perfect%20daylight%20lighting,%20with%20the%20background%20of%20the%20elevated%20counter%20and%20my%20mom%E2%80%99s%20tiered%20fruit%20stand!%20And%20it%20does%20not%20hurt%20that%20she%20has%20no%20little%20people%20constantly%20destroying%20her%20counter%20(honestly%20compels%20me%20to%20add%20it%20also%20does%20not%20hurt%20that%20she%20and%20my%20dad%20are%20better%20housekeepers%20than%20John%20and%20I%20ever%20could%20be).%3C/p%3E%3Cp%3EWhat%E2%80%99s%20that%20you%20say?%20You%20don%E2%80%99t%20photograph%20your%20food,%20you%20eat%20it,%20and%20would%20really%20like%20to%20hear%20about%20the%20cake%20instead%20of%20how%20I%20took%20its%20picture?%20Fair%20enough!%20The%20flavor%20I%20was%20going%20for%20was%20a%20strong%20vanilla%20latte%E2%80%93with%20just%20a%20hint%20of%20chocolate%20from%20the%20glaze.%20And%20I%20think%20I%20succeeded.%20John%20was%20not%20a%20fan,%20but%20he%20does%20not%20care%20for%20coffee%20flavored%20desserts.%20My%20friend%20Donna,%20on%20the%20other%20hand,%20who%20is%20my%20regular%20mocha%20sipping%20partner,%20pronounced%20it%20amazing.%20My%20parents%20loved%20it%20also.%20%20The%20cake%20that%20I%20adapted%20from%20can%20be%20found%20in%20the%20fabulously%20entertaining%20All%20Cakes%20Considered,%20by%20Melissa%20Gray.%3C/p%3E%3Cp%3EChocolate%20Glazed%20Latte%20Cake%3C/p%3E%3Cp%3ERecipe%20type:%20dessert%3C/p%3E%3Cp%3ECuisine:%20cakes%3C/p%3E%3Cp%3EFor%20cake:%3C/p%3E%3Cp%3EFor%20glaze:%3C/p%3E%3Cp%3EI%20was%20out%20of%20cream,%20so%20I%20used%20butter%20plus%201%25%20milk%20plus%20chocolate%20chips%20plus%20light%20corn%20syrup%20and%20pinch%20of%20salt%20and%20winged%20it.%20Use%20your%20favorite%20semi%20sweet%20chocolate%20ganache%20for%20glazing%20cakes;%206%20oz%20chocolate%20to%20%C2%BD%20cup%20heavy%20cream%20with%20a%20pinch%20of%20salt%20is%20a%20good%20ratio.%3C/p%3E%3Cp%3EMake%20the%20coffee%E2%80%93use%20as%20strong%20of%20a%20coffee%20as%20you%20can.%20Dissolve%20the%20espresso%20powder%20into%20it%20while%20it%20is%20hot,%20and%20then%20add%20the%20agave%20syrup%20and%20set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3ESpray%20a%2010%20or%2012%20cup%20bundt%20pan%20with%20a%20baking%20spray%20with%20flour.%20If%20you%20choose%20a%2010%20cup%20pan,%20also%20prepare%20some%20mini%20cake%20pans%20or%20mini%20loaf%20pans.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20an%20electric%20mixer,%20beat%20the%20butter%20on%20medium%20speed%20until%20creamy.%20Gradually%20add%20the%20brown%20sugar%20until%20it%20is%20incorporated,%20and%20then%20beat%20on%20medium%20high%20speed%20for%203%20minutes,%20until%20lightened%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Add%20the%20vanilla%20and%20beat%20for%20one%20more%20minute,%20scraping%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20needed.%3C/p%3E%3Cp%3EMake%20sure%20the%20coffee%20mixture%20has%20cooled%20to%20at%20least%20room%20temperature%E2%80%93if%20it%20has%20not,%20place%20it%20in%20the%20fridge%20or%20freezer%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3EOn%20low%20speed,%20add%20the%20flour%20mixture%20and%20coffee%20mixture,%20alternating,%20in%204%20and%203%20additions,%20respectively,%20beginning%20and%20ending%20with%20the%20flour%20mixture.%20Finish%20mixing%20the%20batter%20by%20hand,%20scraping%20the%20sides%20and%20bottom%20thoroughly.%20Make%20sure%20it%20is%20all%20incorporated,%20but%20do%20not%20over%20mix.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20cake%20pan/s.%20The%20batter%20should%20come%20to%20about%201-2%20inches%20below%20the%20top%20of%20the%20bundt%20pan.%3C/p%3E%3Cp%3EBake%20for%2035-45%20minutes%20(begin%20checking%20at%2035%20minutes%20for%20a%20smaller%20cake,%2040%20minutes%20for%20a%20larger%20cake),%20until%20the%20cake%20is%20pulling%20away%20from%20the%20sides%20of%20the%20pan%20and%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean%20or%20with%20only%20a%20few%20crumbs%20attached.%3C/p%3E%3Cp%3ECool%20the%20cake%20in%20the%20pan%20for%2015%20minutes%20and%20then%20turn%20out%20onto%20a%20cooling%20rack.%3C/p%3E%3Cp%3EMake%20your%20chocolate%20ganache%20glaze.%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EWhen%20cake%20has%20cooled%20completely,%20prepare%20to%20glaze%20it.%20Place%20foil%20or%20wax%20paper%20under%20the%20cooling%20rack.%20Pour%20the%20chocolate%20glaze%20over%20the%20top%20and%20sides%20of%20the%20cake.%20If%20desired,%20you%20can%20pour%20the%20extra%20ganache%20off%20of%20the%20foil,%20back%20into%20the%20bowl,%20and%20then%20drizzle%20additional%20layers%20of%20chocolate%20onto%20the%20cake.%3C/p%3E%3Cp%3ELet%20set%20completely%20before%20slicing.%3C/p%3E%3Cp%3E3.2.1336%3C/p%3E%3Cp%3Ebundt,%3C/p%3E%3Cp%3Ecake,%3C/p%3E%3Cp%3Echocolate,%3C/p%3E%3Cp%3Ecoffee,%3C/p%3E%3Cp%3Eespresso,%3C/p%3E%3Cp%3Efood%20photography,%3C/p%3E%3Cp%3Eganache,%3C/p%3E%3Cp%3Elatte%3C/p%3E){kind=link}
