Ingredients

  • 1 (12 ounce) bag frozen corn-defrosted and drained- or about 4 cups fresh corn off the cob, cooked and cooled
  • 2 jalapenos-seeded and chopped small
  • 1/3 cup red onion-finely chopped (about 1/2 of an onion)
  • 3/4 cup fresh cilantro-chopped
  • juice of 2 limes
  • salt and pepper to taste
