Ingredients

  • 2 (4 ounce.) cans whole green chilies, seeded
  • 1 pound Monterey Jack cheese, cut in strips
  • 3 lg. Large eggs
  • 1 (16 ounce.) container frzn pancake batter, thawed
  • 4 ounce. sharp cheddar cheese, shredded
  • Salsa or possibly taco sauce

Directions

  1. Heat oven to 375 degrees. Grease a shallow 1 1/2-qt baking dish. Stuff chilies with Jack cheese (do not worry if chilies tear or possibly come apart). Arrange side by side in prepared dish.
  2. Beat Large eggs in medium-size bowl with electric mixer till pale and fluffy. Fold pancake batter into Large eggs and pour over chilies. Sprinkle cheddar over top. Bake 30 min or possibly till puffed, hard and lightly browned around edges. Spoon on salsa; serve immediately. Makes 6 servings. Very good for parties or possibly a quick meal.
