Ingredients

  • 10 Large eggs
  • 1 pound Monterey jack cheese, shredded
  • 1/2 c. butter, melted
  • 1/2 c. flour, unsifted
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1 pt. (16 ounce.) cottage cheese
  • 2 (4 ounce.) cans diced chilies

Directions

  1. Beat Large eggs till light. Add in cheese and melted butter. Combine flour, baking pwdr and salt and add in to egg mix. Mix in cottage cheese and blend well. Stir in undrained chilies. Pour into greased 9"x13" baking dish. Bake at 350 degrees for 35 min. Cut into squares and serve warm, or possibly cold and freeze till later. (It's even good cool!) May be reheated in microwave. Yield: 10 to 12 servings. Please Note: The salt may be omitted as the cheese is salty tasting.
