Chile Con Queso (Chile With Cheese)

Ingredients

  • 2 tbsp. vegetable oil
  • 1 c. minced onion
  • 2 sm. garlic cloves, chopped
  • 4 fresh chilies, peeled, minced or possibly 1 (4 ounce.) can minced green chilies
  • 1 or possibly 2 jalapeno chilies or possibly sm. warm chilies, peeled, minced
  • 1 (8 ounce.) can stewed tomatoes
  • 8 ounce. Monterey Jack cheese, shredded (2 c.)
  • 8 ounce. Longhorn cheese, shredded (2 c.)
  • 1 c. dairy lowfat sour cream

Directions

  1. Heat oil in large saucepan. Add in onions and garlic. Cook till tender, but not browned. Add in chilies and tomatoes with a spoon. Lower heat. Add in cheeses and cook till melted. Stir in lowfat sour cream. Cook till just heated; don't boil.
  2. Makes 4 c. of dip.
