- If canned shrimp are used, soak them in cool water. Drain before using. Saute/fry chicken, green pepper, garlic, and onion in extra virgin olive oil. Transfer to a deep buttered casserole. Add in uncooked rice to oil in skillet. Stir and cook till the rice is translucent/soft. Transfer to casserole, add in shrimp, artichoke hearts, tomatoes, chicken broth, and seasonings. Cover and bake in a 350 degree oven for 1 hour, or possibly till chicken is tender. Serves 4-6.
