Chicken Supreme Salad

Ingredients

  • 2 1/2 lbs. cooked/canned chicken, minced and cut into sm. pcs
  • 1 c. minced celery
  • 1 c. peas (petit pois)
  • 1 sm. can almonds (slightly salted)
  • 3 hard boiled Large eggs
  • 5 sweet pickles
  • 5 ounce. cream cheese
  • 10 stuffed olives
  • 1 1/2 c. mayonnaise
  • 1/2 teaspoon vinegar
  • 1/2 teaspoon salt
  • 1 tbsp. lemon juice
  • 2 apples

Directions

  1. Chop well.
  2. Stir all ingredients but the apples which need to be dipped into the lemon juice, then mix all the ingredients well. Serve it cool over a bed of lettuce. Garnish as desired. (Could use red pepper strips or possibly apple slices, etc.)
