Chicken Prosciutto With Mushroom Sauce

Ingredients

  • 3 whole chicken breasts, skinned, boned, halved
  • 5 tbsp. butter
  • 1/4 c. minced onion
  • 1/4 c. flour
  • 2 tbsp. Dijon mustard
  • 1 c. half & half
  • 1/4 c. dry white wine or possibly water
  • 1 c. chicken broth
  • 3 (4.5 ounce.) jars sliced mushrooms, liquid removed
  • 4 ounce. shredded Swiss cheese
  • 16 ounce. pkg. frzn broccoli
  • 6 slices prosciutto or possibly thin sliced cooked ham
  • Paprika

Directions

  1. Place each chicken breast between 2 pcs of plastic wrap and lb. till about 1/4 inch thick; remove wrap. Heat oven to 400 degrees.
  2. In large skillet over medium heat, heat 2 Tbsp. butter. Cook chicken in butter till lightly browned on both sides. Remove chicken.
  3. Heat remaining butter, add in onion and cook till tender, stirring frequently. Remove from heat; stir in flour and mustard. Gradually stir in broth, half & half and wine. Cook over low heat till it thickens and boils. Add in mushrooms and 1/2 c. cheese; stir till melted.
  4. Arrange broccoli in bottom of 9x13 inch pan. Spoon half of sauce over broccoli; alternate ham and chicken slices slightly overlapping. Pour remaining sauce over chicken. Bake 20-30 min. Remove from oven and sprinkle remaining cheese and paprika; bake extra 2 min.
