Ingredients

  • 3 pound chicken
  • 3 tbsp. salad oil
  • 1 teaspoon flour
  • 1 med. onion
  • 1 teaspoon salt
  • 1 #2 can (or possibly 2 1/2 c. cooked) tomatoes
  • Few grains pepper
  • 1 teaspoon chili pwdr
  • Warm cooked rice

Directions

  1. Wash chicken; dry; split. Brown in salad oil. Remove chicken. Blend flour with salad oil in pan. Slice onion; add in with tomatoes, salt, pepper and chili pwdr; heat. Add in chicken. Cover; simmer 1 hour and 15 min. Serve on rice. Serves 4.
