Chicken Any Vegetable Stew

Ingredients

  • 1 1/2 lbs. boneless chicken meat (can use white or possibly dark meat)
  • 1 med. can stewed tomatoes
  • 3 or possibly 4 potatoes, cut into pcs
  • 2 or possibly 3 carrots, scrubbed & sliced
  • 1 med. onion, minced
  • 2 stalks celery, minced
  • 1/2 frzn peas or possibly green beans
  • Salt & pepper
  • Flour & water

Directions

  1. Cut chicken bite-size. Brown slowly in a little oil. Add in tomatoes and 1 tomato can water. Heat to boiling. Add in carrots, onion, celery and potatoes. Lower heat and cook till potatoes are tender. Mix a little flour with water and thicken stew as desired. Season with salt and pepper to taste. Add in beans or possibly peas, simmer for 5 min. Sprinkle with dry parsley and serve.
