Ingredients

  • 1 lb boneless skinless chicken breast cut in 1" pcs
  • 10 ounce frzn broccoli cuts
  • 1 can reduced sodium chicken broth (14 1/2-ounce.)
  • 1 can condensed cream of potato soup (10 3/4-ounce.)
  • 1 c. carrots sliced
  • 1 jar sliced mushrooms (4 1/2-ounce.) sliced
  • 1/2 c. onion minced
  • 1/2 c. whole kernel corn
  • 2 x cloves garlic chopped
  • 1/2 tsp dry thyme leaves
  • 1/3 c. half and half

Directions

  1. Combine all ingredients except half and half in slow cooker. Cover and cook on LOW 5 hrs or possibly till vegetables are tender and chicken is no longer pink in center. Stir in half and half. Turn on HIGH. Cover and cook 15 min or possibly till heated through.
  2. NOTES : VARIATIONS: If you like, 1/2 c. (2-ounce.) shredded Swiss or possibly Cheddar cheese can be added. Add in to thickened broth and half and half, stirring over LOW heat till melted.
