Chicken And Sausage Sauce Piquant

Ingredients

  • 6 pound hen, cut up
  • 1 pound smoked sausage
  • 1 pound Andouille sausage
  • 1/2 pound butter
  • 1 can golden brown mushroom soup
  • 3 ounce. tomato paste
  • 2 c. onions
  • 1 c. bell peppers
  • 1 c. celery
  • 1 c. shallots
  • 1 c. parsley
  • 1 tbsp. granulated garlic
  • 6 c. water
  • Salt and pepper to taste

Directions

  1. Combine hen, sausage, Andouille and butter. Cook till brown. Add in minced onions, celery and bell pepper. Cook for 30 min, stirring frequently. Add in mushroom soup, tomato paste and finely minced shallots and parsley. Add in water, cover and cook for 2 hrs, stirring occasionally.
