Ingredients

  • 1 Tbsp. Garlic pwdr
  • 1 1/2 Tbsp. Basil
  • 1 Tbsp. Thyme
  • 1 Tbsp. Oregano
  • 1 Tbsp. Rosemary
  • 1/2 Tbsp. Marjoram
  • 1/2 Tbsp. Sage
  • 1 1/2 tsp Red pepper Rat-A-Tatouille
  • 1 med Eggplant, peeled and diced
  • 1 Tbsp. Warm extra virgin olive oil
  • 2 lrg Onions, minced
  • 2 x Green peppers, diced
  • 2 x Cloves garlic, crushed
  • 2 x Zucchini, diced
  • 1 x 16 ounce can tomatoes Salt substitute to taste Pepper to taste
  • 2 Tbsp. Minced parsley
  • 1/4 tsp Checkered Tablecloth Italian Blend

Directions

  1. Checkered Tablecloth Italian Blend
  2. Saute/fry eggplant in extra virgin olive oil; add in and saute/fry onions, peppers, and garlic.
  3. When vegetables begin to soften, add in zucchini and tomatoes. Add in all other ingredients, including Checkered Tablecloth Italian Blend. Cover and simmer 25 min; remove cover and simmer 10 min more to reduce liquid.
