  • 2 lrg Tomatoes, sliced
  • 1 x Aubergine, thinly sliced
  • 1 lrg Onion, sliced Grated vegetarian cheese
  • 1 sm Cart plain yogurt Breadcrumbs Herbs eg basil or possibly oregano

Directions

  1. 1. Grease ovenproof baking dish with vegetable oil. Place in it one layer of tomatoes, covered by a layer of onion, then aubergine, adding salt, pepper and herbs to taste.
  2. 2. Repeat process. Cover with yogurt, cheese then breadcrumbs.
  3. 3. Bake in warm oven (375 F/190 C/gas mark 5) for about 40 min.
