,%20because%20it%20is%20smaller%20and%20is%20comprised%20of%20hands-on%20workshops%20and%20tasting%20tours%20of%20Washington,%20D.C.%20%20No%20matter%20what%20you%20call%20it,%20I%20am%20was%20excited%20and%20nervous%20both,%20and%20it%20turned%20out%20absolutely%20fabulously.%20%20Reviews%20to%20come%20later.%3C/p%3E%3Cp%3EBest%20of%20all%20I%20finally%20met%20(and%20roomed%20with)%20Amanda,%20my%20partner%20in%20crime%20over%20at%20World%20Kitchen.%20%20And%20speaking%20of%20World%20Kitchen,%20I%20hope%20you%20are%20planning%20to%20join%20us%20and%20make%20Coloradito%20Mole%20on%20June%205.%20%20You%20can%20turn%20it%20into%20a%20basic%20sauce,%20enchiladas,%20stew,%20you%20name%20it%E2%80%A6.%20We%E2%80%99ll%20be%20tweeting%20under%20the%20hashtag%20%23worldkitchen.%3C/p%3E%3Cp%3EThis%20next%20recipe%20is%20from%20another%20Harvard%20Common%20Press%20book%20(I%20told%20you%20it%20was%20like%20Christmas%20around%20here!),%20Dede%20Wilson%E2%80%99s%20A%20Baker%E2%80%99s%20Field%20Guide%20to%20Chocolate%20Chip%20Cookies%20(which%20they%20will%20be%20re-releasing%20with%20a%20new%20cover%20this%20fall).%20%20For%20someone%20who%20loves%20chocolate%20chip%20cookies%20and%20all%20of%20the%20variations%20and%20deviations%20from%20traditional%20chocolate%20chip%20cookies,%20this%20book%20is%20a%20find.%20%20There%20is%20a%20picture%20with%20each%20cookie%E2%80%93I%20would%20not%20call%20it%20food%20porn%20exactly,%20but%20it%20is%20wonderful%20to%20a%20have%20a%20visual%20reference%20for%20each%20recipe%20in%20the%20book.%20%20Each%20recipe%20comes%20with%20a%20Description,%20Field%20Notes%20and%20Lifespan%E2%80%93and%20because%20I%20love%20context,%20I%20liked%20these%20features.%20%20The%20range%20of%20recipes%20is%20satisfying-there%20are%20classics%20and%20predictable%20deviations%20from%20the%20classics,%20but%20there%20are%20also%20unexpected%20gems,%20like%20the%20recipe%20I%20chose%20to%20make.%20%20My%20book%20naturally%20opened%20to%20the%20page%20with%20Peanut%20Brittle%20Chip%20Bars%E2%80%93surely%20it%20was%20a%20sign.%3C/p%3E%3Cp%3EA%20while%20back,%20when%20I%20finally%20conquered%20caramel%20in%20the%20form%20of%20Salted%20Vanilla%20Bean%20Caramels%20Chews,%20I%20ruminated%20on%20my%20frustration%20with%20caramel%20recipes%20that%20do%20not%20provide%20temperatures,%20instead%20relying%20on%20minutes%20or%20colors.%20%20I%20said%20I%20was%20not%20attempting%20another%20one%20until%20I%20was%20more%20comfortable%20and%20confident%20about%20caramel.%3C/p%3E%3Cp%3EWell%20I%20guess%20that%20day%20has%20come.%20%20This%20recipe%20used%20minutes,%20which%20I%20actually%20ended%20up%20disregarding%20and%20instead%20I%20stuck%20a%20thermometer%20in%20the%20pot%20and%20had%20an%20idea%20of%20what%20I%20should%20be%20aiming%20for.%20%20This%20was%20brilliant%20because%20it%20means%20it%20turn%20I%20can%20tell%20you%20what%20to%20aim%20for!%20%20They%20turned%20out%20fantastically.%20%20Kind%20of%20like%20a%20Snickers%20bar%20meets%20a%20Twix%20bar,%20with%20the%20additional%20bonus%20of%20being%20fantastically%20fresh%20and%20homemade.%3C/p%3E%3Cp%3ECaramelized%20Peanut%20Shortbread%20Bars%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ECooking%20Directions%3C/p%3E%3Cp%3ELine%20a%209X13%20baking%20pan%20with%20parchment%20paper.%20Lightly%20spray%20with%20oil.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20flour%20and%20salt%20together.%20Set%20aside.%3C/p%3E%3Cp%3EBeat%201%20cup%20of%20butter%20until%20creamy,%20and%20then%20add%20the%20granulated%20sugar%20gradually,%20beating%20until%20light%20and%20fluffy%20(about%205%20minutes%20total).%20Beat%20in%201/2%20teaspoon%20of%20vanilla.%20Add%20the%20flour%20in%203%20additions,%20slowly%20mixing%20it%20in.%20Mix%20in%201/2%20cup%20of%20miniature%20chocolate%20chips%20with%20the%20last%20bit%20of%20flour.%20Press%20into%20the%20prepared%20pan%20evenly%20and%20cover%20with%20plastic%20wrap.%3C/p%3E%3Cp%3EChill%20for%2030%20minutes.%3C/p%3E%3Cp%3EAfter%2015%20minutes,%20preheat%20the%20oven%20at%20350%20F.%3C/p%3E%3Cp%3EBake%20the%20crust%20until%20it%20is%20just%20barely%20turning%20light%20golden%20brown%20at%20the%20edges%20and%20top,%20but%20is%20not%20fully%20cooked,%20about%2025%20minutes.%3C/p%3E%3Cp%3EAbout%2010%20minutes%20into%20the%20baking,%20prepare%20the%20filling.%20Combine%201%20cup%20of%20butter%20with%20the%20brown%20sugar%20and%20golden%20syrup%20in%20a%20heavy,%20medium-large%20sauce%20pan.%20Heat%20on%20medium%20heat,%20stirring%20occasionally,%20until%20it%20comes%20to%20a%20boil,%20at%20which%20point%20stop%20stirring.%20Reduce%20heat%20to%20medium%20low%20to%20low,%20and%20cook%20until%20a%20thermometer%20reaches%20300%20F%20(adjust%20temperature%20as%20needed%20to%20ensure%20that%20the%20filling%20is%20ready%20when%20the%20crust%20is%20ready).%20After%20it%20reaches%20300%20F,%20remove%20the%20sauce%20pan%20from%20the%20heat%20and%20stir%20in%20the%20cream,%20peanuts,%201/2%20teaspoon%20of%20vanilla,%20and%20a%20pinch%20of%20salt.%20Pour%20the%20filling%20over%20the%20partially%20baked%20crust%20and%20return%20it%20to%20the%20oven.%3C/p%3E%3Cp%3EBake%20until%20the%20filling%20has%20darkened%20slightly,%20is%20bubbling%20all%20over%20and%20the%20edges%20have%20set,%20about%2015%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20the%20oven%20and%20let%20it%20cool%20for%205%20minutes.%20Sprinkle%20the%20remaining%20miniature%20chocolate%20chips%20all%20over%20the%20top%20of%20the%20crust.%3C/p%3E%3Cp%3EPlace%20on%20a%20cooling%20rack%20to%20cool%20completely.%20Slice%20when%20cool--these%20bars%20were%20fine%20at%20room%20temperature%20for%20me,%20but%20Wilson%20preferred%20them%20chilled.%3C/p%3E){kind=link}
