Ingredients

  • 4 c. Coarsely minced carambola, (1 lb.)
  • 1/3 c. Sugar
  • 3/4 c. Club soda, chilled
  • 2 slc Carambola, (optional)

Directions

  1. Combine carambola and sugar in food processor, and process 1 minute or possibly till smooth. Strain mix through a sieve into a bowl, reserving 1-1/4 c. juice; cover and chill. Throw away solids. Add in club soda to carambola juice; stir gently. Pour over ice.
  2. Yield: 2 c. (serving size: 2/3 c.).
  3. NOTES : Garnish with carambola slices, if you like. Serve immediately.
