Cajun Style Red Beans And Brown Rice

Ingredients

  • 1 lb Dry pinto beans
  • 2 c. Minced yellow onion
  • 1 c. Minced green onions
  • 1 c. Minced green bell pepper
  • 1/2 tsp Chopped garlic
  • 1/4 tsp Red cayenne pepper
  • 3/4 tsp Grnd black pepper
  • 1/2 tsp Salt
  • 1/4 tsp Oregano
  • 1/4 x Teasppon garlic pwdr
  • 1 Tbsp. Worcestershire sauce
  • 3 dsh Tabasco sauce
  • 6 ounce Can of tomato paste
  • 1/4 tsp Thyme
  • 1 tsp Celery flakes
  • 6 c. Cooked brown rice

Directions

  1. (This is real good and warm, so you may want to tone down warm spices and add in them last, to taste, if you cannot tolerate the spicy heat.)
  2. Wash beans and then soak for 12 hrs. (I never soak beans and never have any gas unless I eat them with lowfat milk.)
  3. Drain water. Fill a large pot with beans; add in water to 1/2 inch above beans level. Add in remaining ingredients except rice; cook over low heat 2 to 2 1/2 hrs, covered. Serve over cooked brown rice.
  4. I got this recipe from the January 94 issue of Shape magazine, in an article about the Cooper Clinic (I believe it's in Texas). I didn't want to post without trying first, So last weekend I tried it and it's wonderful!
