Cajun potato salad Recipe

  • 2 pounds small red potatoes
  • 1/2 cup chopped red onion
  • 1/2 cup sliced green onion
  • 1/4 cup minced fresh parsley
  • 1/2 pound cajun sausage, sliced
  • 6 tbsp cider vinegar, divided
  • 6 tbsp oilve oil
  • 1 tble dijon mustard
  • 2 garlic cloves, minced
  • 1/2 tsp pepper
  • 1/4 to 1/2 tsp cayenne pepper

Directions

  1. Cook the potatoes in boiling salted water for 20-30 miutes or until tender, dran
  2. Rince with cold water, cool completely, cut into 1/4 inch slices, place in a large bowl.
  3. Add onions, parsly and 3 tbsp vinegar and toss
  4. In a medium skillet, cook sausage in oil for 5 to 10 minutes or until it begins to brown well
  5. remove with slotted spoon and add to potatoes mixture
  6. To drippings in skillet, add mustard, garlic, pepper, and cayenne pepper and remaining vinegar, bring to boil, whisking constantly
  7. Pour over salad and toss gently, serve immediately.
