Ingredients

  • 1 ½ lbs Brussels Sprouts, trimmed and halved
  • 1 tablespoon Butter
  • 1-2 tablespoons Olive oil
  • 3 ½ – 4 ounces pancetta, diced (or substitute with thick cut bacon)
  • 1 cup shredded Swiss or Gruyere (or ½ cup of each)
  • 1 quantity Béchamel Sauce (recipe follows)
  • Salt and pepper
  • ¼ cup butter
  • ¼ cup all purpose flour
  • 2 ¼ cups warm whole milk
