Ingredients
- 1 1/2 pounds orange-fleshed sweet potatoes, peeled and cut into large chunks
- 3 1/3 cups all-purpose flour
- 2 cups sugar
- 1 tablespoon baking soda
- 1 tablespoon ground cinnamon
- 1 tablespoon ground allspice
- 1 tablespoon grated nutmeg
- 1 tablespoon ground ginger
- 1/2 teaspoon kosher salt
- 4 eggs
- 1 cup unsalted butter, melted and slightly cooled
- 2 cups chocolate chips
- Chocolate-Chicory Sauce (recipe follows)
- 6 ounces bittersweet chocolate, finely chopped
- 1/3 cup heavy cream, plus more if needed
- 1/4 cup brewed chicory coffee, such as Cafe du Monde brand

,%20of%20which%20I%20received%20a%20review%20copy.%20It%20was%20written%20with%20former%20San%20Francisco%20Magazine%20editor%20Jan%20Newberry.%3C/p%3E%3Cp%3EYou%E2%80%99ll%20find%20all%20your%20Brown%20Sugar%20Kitchen%20favorites%20here,%20including%20Holland%E2%80%99s%20legendary%20Cornmeal%20Waffles%20with%20Apple%20Cider%20Syrup%20and%20Buttermilk%20Fried%20Chicken.%20All%20in%20all,%20you%E2%80%99ll%20find%20more%20than%2080%20recipes%20from%20everything%20from%20Creole%20Gazpacho%20to%20Smoked%20Buttered%20Rum.%20What%E2%80%99s%20really%20special%20about%20this%20book,%20though,%20is%20its%20sense%20of%20place.%20Holland%E2%80%99s%20restaurant%20is%20an%20intrinsic%20part%20of%20this%20West%20Oakland%20neighborhood.%20The%20book%20celebrates%20the%20people%20that%20make%20this%20area%20what%20it%20is%20by%20including%20profiles%20of%20its%20entrepreneurs,%20musicians%20and%20community%20leaders.%3C/p%3E%3Cp%3EHoliday%20desserts%20don%E2%80%99t%20get%20more%20comforting%20than%20this%20cake,%20studded%20with%20plenty%20of%20chocolate%20chips.%20It%20bakes%20up%20moist%20not%20unlike%20pumpkin%20bread,%20and%20heady%20with%20autumn%20spices.%20The%20recipe%20says%20the%20cake%20will%20take%20about%2040%20to%2050%20minutes%20to%20bake.%20In%20my%20oven,%20it%20took%2060%20minutes.%3C/p%3E%3Cp%3EYou%E2%80%99ll%20need%20chicory%20coffee%20for%20the%20Chocolate-Chicory%20sauce.%20Just%20pick%20up%20a%20can%20of%20New%20Orleans%E2%80%99%20Cafe%20du%20Monde%20chicory%20coffee%20at%20Cost%20Plus%20World%20Market%20and%20you%E2%80%99re%20good%20to%20go.%20The%20sauce%20is%20optional,%20but%20the%20cake%20benefits%20from%20it,%20so%20do%20make%20it%20if%20you%20can.%3C/p%3E%3Cp%3EChicory-laced%20coffee%20from%20New%20Orleans%20fabled%20Cafe%20du%20Monde.%3C/p%3E%3Cp%3EMy%20only%20quibble%20is%20the%20original%20recipe%20for%20the%20sauce%20not%20only%20made%20way%20too%20much%20for%20the%20cake,%20but%20was%20of%20such%20a%20thin%20consistency%20that%20it%20was%20more%20like%20chocolate%20milk%20than%20a%20glaze.%20Had%20I%20really%20thought%20about%20it%20beforehand%20as%20I%20read%20the%20recipe,%20I%20would%20have%20realized%20that%202%20cups%20of%20liquid%20to%2010%20ounces%20of%20chocolate%20just%20didn%E2%80%99t%20sound%20right.%20So%20below%20is%20the%20sauce%20recipe%20if%20I%20were%20to%20do%20it%20again.%20I%20cut%20the%20recipe%20in%20half%20and%20decreased%20the%20amount%20of%20cream%20even%20more%20to%20create%20a%20thicker%20consistency.%20If%20it%E2%80%99s%20still%20not%20to%20your%20liking,%20just%20remember%20that%20you%20can%20add%20more%20chocolate%20to%20thicken%20it%20or%20a%20tablespoon%20or%20more%20of%20cream%20to%20thin%20it%20out.%3C/p%3E%3Cp%3EThe%20slightly%20bitter%20taste%20of%20the%20glaze,%20coupled%20with%20its%20hint%20of%20chicory,%20really%20is%20an%20ideal%20compliment%20to%20the%20sweet%20potato%20cake.%3C/p%3E%3Cp%3EPlus,%20what%20a%20delicious%20way%20to%20get%20your%20dose%20of%20beta-carotene%20this%20holiday%20season.%3C/p%3E%3Cp%3EYou%20can%20never%20have%20too%20many%20chocolate%20chips.%3C/p%3E%3Cp%3ESpiced%20Sweet%20Potato%20Bundt%20Cake%3C/p%3E%3Cp%3E(Serves%2012)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Butter%20and%20flour%20a%2012-cup%20Bundt%20pan.%3C/p%3E%3Cp%3EIn%20a%20medium%20pot,%20cover%20the%20sweet%20potatoes%20with%20water.%20Bring%20to%20a%20boil,%20and%20cook%20until%20the%20potatoes%20are%20soft,%20about%2015%20minutes.%20Drain.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20the%20flour,%20sugar,%20baking%20soda,%20cinnamon,%20allspice,%20nutmeg,%20ginger,%20and%20salt.%3C/p%3E%3Cp%3EUsing%20a%20stand%20mixer%20fitted%20with%20the%20paddle%20attachment,%20beat%20the%20cooked%20sweet%20potatoes%20and%20eggs%20on%20medium%20speed%20until%20smooth.%20Add%20the%20melted%20butter%20and%20beat%20until%20combined.%20Reduce%20speed%20to%20low,%20add%20flour%20mixture,%20and%20mix%20just%20until%20combined.%20Remove%20the%20work%20bowl%20from%20the%20mixer%20and,%20with%20a%20wooden%20spoon,%20stir%20in%20the%20chocolate%20chips.%20Spoon%20the%20batter%20into%20the%20prepared%20Bundt%20pan.%3C/p%3E%3Cp%3EBake%20until%20a%20toothpick%20or%20skewer%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean,%2040%20to%2050%20minutes.%20(Mine%20took%2060%20minutes,%20just%20fyi.)%20Transfer%20to%20a%20wire%20rack%20to%20let%20cool%20completely%20in%20the%20pan,%20about%201%20hour.%20Loosen%20the%20cake%20from%20the%20pan%20using%20the%20tip%20of%20a%20dinner%20knife,%20then%20invert%20a%20rack%20over%20the%20pan%20and%20turn%20the%20cake%20out%20onto%20the%20rack.%3C/p%3E%3Cp%3ELet%20cool,%20then%20drizzle%20on%20the%20Chocolate-Chicory%20Sauce.%3C/p%3E%3Cp%3EServe%20at%20room%20temperature.%3C/p%3E%3Cp%3ENote:%20To%20store,%20cover%20with%20plastic%20wrap%20and%20leave%20at%20room%20temperature%20for%20up%20to%203%20days.%3C/p%3E%3Cp%3EChocolate-Chicory%20Sauce%3C/p%3E%3Cp%3E6%20ounces%20bittersweet%20chocolate,%20finely%20
