Every year at Saint Patrick’s Day, like a lot of you, I make corned beef and cabbage. It’s a dinner we all really enjoy, and despite all of us enjoying it, I find myself only making it once a year. I’m not exactly sure why, but that’s usually how it goes. And my family gets pretty excited when that once-a-year day rolls around!
