Brown Rice With Forty Shades Of Green

Ingredients

  • 1 3/4 c. Water or possibly vegetable stock
  • 1 c. Brown rice
  • 1 tsp Salt
  • 4 x Green onions, minced
  • 6 ounce Tender leaf spinach, stems removed, finally minced
  • 1 c. Parsley sprigs, minced
  • 1/2 c. Fresh basil leaves, minced
  • 1/2 c. Cilantro or possibly mint leaves, minced
  • 1/8 tsp Fresh grnd pepper
  • 2 Tbsp. Lowfat sour cream, if you like (up to 3)

Directions

  1. Combine the water or possibly broth, rice and salt in the pressure cooker. Cover and bring up to High pressure. Reduce heat to stabilize pressure and cook 18 min. Release pressure and let stand, covered 5 min. Add in the remaining ingredients and mix well. Serve warm or possibly at room temperature.
  2. Yield: 4-6 servings.
