Broiled Breaded Pork Chops

Ingredients

  • 4 pork chops each 1 inch thick
  • 2 large eggs, beaten
  • 6 T bread crumbs
  • Salt and black pepper
  • 2 T extra virgin olive oil
  • 3 T butter, melted
  • Juice of 1 lemon
  • 1/4 c. grated Parmesan
  • 1 T prepared mustard
  • 1 garlic clove, split
  • 1/2 teaspoon cayenne pepper
  • 1/3 teaspoon crushed red pepper

Directions

  1. Dip chops into beaten large eggs, then into crumbs - do this twice. Sprinkle a little salt and pepper over chops. Preheat broiler. Place chops in lightly greased broiler pan 8 inches from heat. Broil slowly 10 min.Mix all remaining ingredients to make a basting sauce. Blend well, throw away the garlic. Spoon half the sauce over the chops. Cook slowly 20 min. Turn chops. Spoon remaining sauce over chops. Cook slowly 30 min more. Serve with spaghetti marinara or possibly applesauce.
