Brittany Butter Cookies

Similar to shortbread but even richer and more like cake in texture

Ingredients

  • 6 egg yolks, lightly beaten
  • 1 tbsp milk
  • 2 1/4 cups flour
  • 1 3/4 cup superfine sugar
  • 1 cup butter, at room temperature

Directions

  1. Preheat the oven to 350 F
  2. Grease two baking sheets
  3. Mix 1 tbsp of the egg yolks with the milk to make a glaze
  4. Set aside
  5. Sift the flour into a bowl
  6. Add the egg yolks, sugar, and butter
  7. Work them together until creamy
  8. Using your fingertips, bring in the flour, a little at a time, until it is all incorporated
  9. The mixture should form a lightly sticky dough
  10. Gather it together
  11. Using floured hands, pat out the dough to about 1/4 inch thick
  12. Stamp out round pieces using a 3-inch cutter
  13. Transfer the pieces to the prepared baking sheets
  14. Brush each with a little of the reserved egg and milk glaze
  15. Using the back of a knife, score gently with lines to create a lattice pattern
  16. Bake for about 12 minutes, or until golden
  17. Cool on the baking sheet placed on a wire rack for 15 minutes
  18. Carefully remove the cookies using a spatula and allow to cool completely on a wire rack
