Ingredients
- 1 x pita bread, cut in half cooking spray
- 2 x Large eggs
- 1/2 c. diced cooked potatoes Salt and grnd black pepper to taste
Directions
- Preheat oven to 350 degrees. Place pita bread in oven to hot.
- Coat a medium skillet with cooking spray and place over high heat. Add in potatoes; saute/fry till lightly browned, about 5 min. Reduce heat to medium and add in Large eggs. Mix gently till Large eggs are hard, about 45 seconds.
- Season with salt and black pepper. Remove pita from oven. Stuff pita with potato and egg mix.
