Ingredients

  • 3 slices day-old bread, cubed
  • 1/2 c. raisins
  • 2 c. skim lowfat milk
  • 2 Large eggs, slightly beaten
  • 2 tbsp. sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees. Mix bread cubes and raisins in 1 1/2-qt baking dish. Combine remaining ingredients. Pour over bread and raisins; stir. Set dish in shallow pan on oven rack. Pour warm water in pan to depth of 1 inch. Bake 45-55 min or possibly till knife inserted in pudding comes out clean. 1/2 c. serving = 1/2 bread, 1/2 lowfat milk, 1/2 fat, 1 fruit
