Ingredients

  • 1 1/2 gallons sliced cucumbers
  • 4 med. sliced onions
  • 2 green peppers, sliced in long thin strips
  • 1 red (sweet) pepper, sliced in thin strips
  • 1/2 c. canning salt (not table salt)
  • 5 c. sugar
  • 1 1/2 teaspoon turmeric
  • 1/2 teaspoon grnd cloves
  • 2 tbsp. white mustard seed
  • 2 c. water
  • 3 c. yellow cider vinegar

Directions

  1. Combine cucumbers, onions, peppers with canning salt. Cover for 3 hrs. Drain thoroughly. Put into syrup of sugar, turmeric, grnd cloves, white mustard seed, water and vinegar. Place in large enamel or possibly stainless steel pan. Bring to a boil, do not boil (scald). Pour into warm sterile jars and seal.
