Ingredients
- 2 cups whole red candied cherries
- 2 cups golden raisins
- 2 cups bourbon (I use Jack)
- 2 cups unsalted butter, softened
- 2 cups white sugar
- 2 cups dark brown sugar, firmly packed

- 1 teaspoon salt

%20comments.%20So%20I%20had%20to%20explain.%3C/p%3E%3Cp%3EAs%20I%20just%20did%20again%20in%20this%20post.%3C/p%3E%3Cp%3ETrust%20me,%20this%20is%20NOT%20fruitcake;%20it%20is%20just%20a%20delicious%20dessert%20cake%20(or%20breakfast%20bread,%20since%20it%20doesn't%20have%20icing%20--%20you%20know%20my%20rule).%20Very%20dense,%20very%20rich,%20very%20fruity%20very%20nutty%20and,%20after%20three%20weeks%20of%20marinating%20in%20bourbon-soaked%20cheesecloth,%20very%20boozy.%20In%20fact,%20it%20takes%20that%20long%20to%20reach%20what%20I%20have%20dubbed%20its%20%22boozy%20zenith.%22%3C/p%3E%3Cp%3ESoaking%20the%20fruit%20overnight%20in%20bourbon%20gives%20it%20extra%20zingLots%20of%20floury%20pecans%3C/p%3E%3Cp%3EThis%20is%20a%20large%20recipe.%20I%20can%20get%20at%20least%20three%20full-sized%20loaves%20out%20of%20it,%20although%20I%20have%20taken%20to%20making%20two%20big%20loaves%20and%20a%20bunch%20of%20mini%20loaves%20to%20give%20as%20gifts.%20It%20really%20makes%20the%20perfect%20gift.Mini%20loaves%20make%20great%20gifts%3C/p%3E%3Cp%3EJust%20don't%20tell%20anyone%20you're%20giving%20them%20a%20fruitcake.%20Tell%20them%20it%20is%20a%20special%20%22Boozy%20Zenith%20Bourbon%20Pecan%20Cake.%22%3C/p%3E%3Cp%3E(And,%20yes,%20I%20know%20that%20Jack%20Daniels%20is%20technically%20not%20a%20%22legitimate%22%20bourbon%20but%20I%20don't%20care,%20so%20don't%20leave%20any%20comments%20to%20that%20effect%20or%20you%20will%20never%20receive%20a%20gift-sized%20Boozy%20Zenith%20Bourbon%20Pecan%20Cake%20from%20anyone,%20I%20will%20see%20to%20it.%20Fa%20la%20la%20la%20la.)%3C/p%3E%3Cp%3EBoozy%20Zenith%20Bourbon%20Pecan%20Cake%20(origin%20unknown)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20cherries,%20raisins%20and%20bourbon%20in%20large%20mixing%20bowl.%20Cover%20tightly%20and%3C/p%3E%3Cp%3Elet%20stand%20in%20refrigerator%20overnight.%20Drain%20fruits%20and%20reserve%20bourbon.%3C/p%3E%3Cp%3EPlace%20butter%20in%20large%20bowl%20of%20electric%20mixer%20and%20beat%20on%20medium%20speed%3C/p%3E%3Cp%3Euntil%20light%20and%20fluffy.%20Add%20sugars%20gradually,%20beating%20on%20medium%20speed%3C/p%3E%3Cp%3Euntil%20well%20blended.%20Add%20egg%20yolks,%20beating%20until%20well%20blended.%3C/p%3E%3Cp%3ECombine%201/2%20cup%20of%20the%20flour%20with%20the%20pecans.%20Whisk%20the%20remaining%20flour%20with%20the%3C/p%3E%3Cp%3Ebaking%20powder,%20salt%20and%20nutmeg.%20Add%202%20cups%20of%20the%20flour%20mixture%20to%20the%3C/p%3E%3Cp%3Ecreamed%20butter%20mixture%20and%20mix%20thoroughly.%20Add%20the%20reserved%20bourbon%20and%20the%3C/p%3E%3Cp%3Eremainder%20of%20the%20flour%20mixture%20alternately,%20ending%20with%20flour.%20Beat%3C/p%3E%3Cp%3Ewell%20after%20each%20addition.%3C/p%3E%3Cp%3EBeat%20egg%20whites%20until%20stiff,%20but%20not%20dry;%3C/p%3E%3Cp%3Efold%20gently%20into%20cake%20batter.%20Add%20drained%20fruits%20and%20floured%20pecans%20to%3C/p%3E%3Cp%3Ethe%20cake%20batter.%20Blend%20thoroughly.%3C/p%3E%3Cp%3EGrease%20several%20full-sized%20and/or%20mini%20loaf%20pans;%20line%3C/p%3E%3Cp%3Ewith%20waxed%20paper.%20Grease%20and%20lightly%20flour%20waxed%20paper.%20Pour%20cake%3C/p%3E%3Cp%3Ebatter%20into%20pan%20within%201/2%20inch%20of%20the%20top.%20Place%20in%20275%20degree%20oven;%20bake%20for%20about%202%20hours%20or%20until%20a%20cake%20tester%20inserted%20in%3C/p%3E%3Cp%3Ecenter%20of%20cake%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20cakes%20in%20pans%20on%20cake%20rack%3C/p%3E%3Cp%3E2-3%20hours.%20Remove%20from%20pans,%20peel%20off%20waxed%20paper.%20Wrap%20cakes%20in%20cheese%3C/p%3E%3Cp%3Ecloth%20saturated%20in%20bourbon,%20then%20wrap%20in%20aluminum%20foil%20or%20plastic%20wrap%3C/p%3E%3Cp%3Eand%20store%20in%20tightly%20covered%20container%20in%20refrigerator%20for%20several%3C/p%3E%3Cp%3Eweeks,%20to%20allow%20the%20cakes%20to%20reach%20their%20BOOZY%20ZENITH.%3C/p%3E){kind=link}
