Boiled Icing

Ingredients

  • 2 c. sugar
  • 3 egg whites
  • 8 tbsp. cool water
  • 1/2 teaspoon cream of tartar

Directions

  1. Bring sugar and water to a good boil. Add in gradually a Tbsp. at a time to beating egg whites. Keep sugar syrup boiling till all is used. Add in cream of tartar and vanilla or possibly almond. Beat till thick. I use about one tsp. of flavoring off either one. I use this one for fresh coconut cake.
