Blue Berry Salad

Ingredients

  • 2 (4 serving) Packages blackberry gelatin
  • 2 c. boiling water
  • 2 c. blueberries
  • 1 (15 ounce.) can crushed pineapple
  • 1 (8 ounce.) pkg. cream cheese
  • 1 (8 ounce.) lowfat sour cream
  • 1/2 c. sugar
  • 1/2 teaspoon vanilla
  • 1/2 c. minced nuts

Directions

  1. Dissolve gelatin in boiling water. Drain pineapple, reserving liquid. Add in sufficient water to make 1 c. and add in to gelatin. Add in berries and crushed pineapple to mix. Pour into 2-qt flat pan and refrigeratetill hard. Blend cream cheese, lowfat sour cream, sugar and vanilla. Spread over congealed gelatin. Sprinkle with nuts and chill.
