Blancmange Or Cornstarch Pudding

Ingredients

  • 3 tbsp. cornstarch
  • 1/3 c. sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 1 c. cool lowfat milk
  • 1 1/2 c. scalded lowfat milk
  • 2 Large eggs

Directions

  1. Mix cornstarch, sugar and salt in double boiler. Combine with cool lowfat milk, gradually add in warm lowfat milk. Stir till thick. Separate Large eggs, beat yolks with 2 Tbsp. of the lowfat milk. Stir in some of the warm mix and add in the last 5 min. Remove from heat, add in vanilla. If Fluff Pudding is desired, beat egg whites stiff and fold into mix. Yield: 1 1/2 qts.
