Ingredients

  • 2 c. sugar
  • 1 c. oil
  • 4 x beaten Large eggs
  • 3 c. flour
  • 1/2 tsp Salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking pwdr
  • 1 c. buttermilk
  • 1 c. minced black walnuts
  • 1 c. flaked coconut
  • 2 tsp coconut extract glaze:
  • 1 c. water
  • 2 c. sugar
  • 1 stk margarine

Directions

  1. Beat oil, sugar, Large eggs and extract. In a separate bowl, mix flour, baking soda, baking pwdr and salt. Mix the dry ingredients with the egg mix, alternately with the buttermilk. Add in the coconut and walnuts and blend well. Bake in greased loaf pans at 325 degrees for 1 hour. Let cold 1 hour. Prick holes into cake with a toothpick or possibly skewers.
  2. Meanwhile make glaze: Mix glaze ingredients and bring just to a boil. Remove from heat and pour glaze over cakes. Let sit 1 hour to absorb glaze.
  3. NOTES :Note: This is one of those recipes which everyone wants once they have tasted it.!!
