Ingredients

  • 1 c. pitted black olives
  • 5 x anchovy fillets
  • 5 x garlic cloves
  • 1 Tbsp. fresh rosemary leaves (or possibly 1 tspn dry rosemary)
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 c. virgin extra virgin olive oil

Directions

  1. In the bowl of a food processor fitted with a steel blade, blend the olives, anchovy fillets, garlic, rosemary, and pepper to a smooth paste. With the processor on, slowly add in the extra virgin olive oil till combined, about 2 min. Transfer the olive paste to a small bowl, and set aside.
  2. Makes about 1 1/4 c..
  3. Yield: 1 1/4 c.
